Hugo Spritz
A pale, floral spritz of elderflower, prosecco, mint and lime - Cortelume's aperitivo hour in a glass.

Ingredients
- 50ml elderflower liqueur or elderflower cordial
- 100ml chilled prosecco
- A splash of soda water or sparkling water, to top
- A generous handful of fresh mint leaves
- 2-3 lime wheels, plus a small squeeze of juice
- Plenty of ice
Method
- Fill a large wine glass generously with ice.
- Bruise the mint leaves gently between your palms to release their scent, then drop them into the glass.
- Add the elderflower liqueur or cordial and a small squeeze of lime juice.
- Pour in the chilled prosecco, then top with a splash of soda water.
- Stir once, very gently, so the bubbles hold.
- Finish with the lime wheels and a final sprig of mint pressed against the side of the glass.
Essy note: Elderflower cordial in place of the liqueur makes a lighter, non-alcoholic version - add a touch more soda water to balance the extra sweetness. Best made one glass at a time, straight over ice, rather than batched in a pitcher.
