recipe 07.

Semi healthy apple turnovers.

As autumn has set in, I made this super easy yummy recipe. Everyone can make this I am sure of it.

You’ll need:

10 slices frozen puff pastry

2 apples

100 g raisins

1 tsp ground cinnamon

3 tbsp fine brown sugar

1 medium egg

Preheat the oven to 200 C. Divide the puff pastry over a baking tray lined with baking paper and remove the plastic sheets

Peel and cut the apples into wedges, remove the core and cut the flesh into tiny cubes . Mix the apple with the raisins, cinnamon, half of the sugar in a bowl. Divide the filling over one half of the slices (about 3 tbsp per slice), but keep all edges free.

Fold the puff pastry diagonally over the filling and press the edges firmly with the tines of a fork. Beat the egg. Brush the flaps with the egg using a baking brush and sprinkle with the rest of the sugar. Bake for about 20-25 minutes just below and above the middle of the oven until golden brown and cooked through.

recipe 06.

Yummy healthy breakfast banana muffins.

4 ripe bananas
4 eggs/ substitute for applesauce to go vegan
100 gr almond flour
100 gr oat flour
50 gr Medjoul dates, pitted
200 gr blueberries
1 tsp tartaric baking powder
pinch of salt

preheat oven to 180 degrees

Mix the ripe bananas with the dates until a smooth consistency.
Beat eggs (or apple sauce if you like to try vegan) with the salt.
Mix the batter and the egg mixture together.
Whisk in the four, make sure to put it through a sieve. Add baking powder.
Finally mix through the blueberries gently and fill the baking tin. I line them with muffin paper so they don’t stick.
In the oven for about 25 minutes.
Let them cool down before eating them!

Great as a snack, as a breakfast on the go or with your evening coffee!

recipe 05.

Vegetable pizza.

As you all know I am a fan of all things delicious. This pizza by Home – Magioni combines healthy(ok less unhealthy, with fast-food cravings)

The pizza is made from courgetti and I usually make things ealy by making a cheese pizza. Half vegan cheese and half gorgonzola. Topped with rocket and I am good to go.

Make sure not to put too much sauce on, I know we tend to do so, but the bottom will get soggy, and it will not be so yummy.

Now I realize this is not a full recipe, but I wanted to share this somewhat more healthy option with you guys as you are asking me almost every weekend what I will be making. This is a Esther’s fav!

Belgian Beef Stew.

Especially when the days are getting shorter and colder, stews are the way to go.

I am sharing this recipe with your lovelies as it is one of my favorites. Especially with the home made fries you can find on the page as well!

What will you be needing for a 4 persons stew:

  • 800 grams of beef steak
  • 30 grams of butter
  • Some pepper and salt
  • 4 big yellow unions
  • 4 cloves
  • 3 bay leaves
  • 1 big spoonful of mustard
  • 100 grams of gingerbread
  • 300ml of Belgian triple beer (Westmalle is my fav)
  • 250ml of beef broth

 

Make sure to use a cast iron pan (I use this one: Braadpan Rond in Geëmailleerd Gietijzer | Le Creuset NL)

Make sure to get the meat out of the fridge an hour before starting this recipe.

Start with slowly heating up your pan. Cut your unions into 4 parts, you will be slowly cooking them so it seems like a lot but they welt down. I take out my unions as they start to caramelize and I put in the beef which I have cut into small cubes 3by3 approx. don’t put it all in at once, it needs to sear at a high temp and get brown and crispy, it does not need to be ready, just nice and brown.

Once your meat is brown put it all in the pan, union on top and all your ingredients on top of the beef. Make sure to stir, then put on the lid and let it simmer for a good hour or 6. Make sure the temperature is low so it is not boiling, just a small simmer. Stir every half an hour. At hour 5 the meat will start to fall apart and the sauce will slowly start to thicken. Then you can take off the lid and slowly turn the temperature up. Be sure to take out the cloves and bay leaves before you serve.

This is the perfect dish to make on a slow Sunday with my playlist playing in your kitchen.

recipe 03.

Creamy Chocolate Cake.

This is the perfect chocolate cake that goes extremely well with coffee.

It is so incredibly simple, you will never want to go back to making difficult cakes.

What will you be needing:

  • 325 gr of pure chocolate ( I use 70% chocolate)
  • 250 gr of butter
  • 160 gr of sugar (I use homemade vanilla sugar)
  • 5 eggs
  • Teaspoon of salt
  • 1 tsp vanilla extract
  • 80 gr of flower
  • Some cocoa powder to decorate on top

Here is how you proceed:

Preheat your oven to 180 degrees Celsius. I used a cake mold of 24cm and lined it with some parchment paper.

Melt your chocolate au-bain-marie and mix it with your butter.

In another bowl mix the sugar, eggs, salt vanilla extract until they combine perfectly. Then put in the warm chocolate/butter mixture and mix it well.

Pour the batter in the cake mold and bake it for approx. 30 minutes. The cake will not seem ready, but it is, it just stays a little gooey in the middle

Serve when cooled down, delicious with some coffee!

recipe 02.

Homemade herb butter.

This is one of the easiest ways to make your own flavored butter without all the  hassle.

Just start easy and once you get the hang of it you can start experimenting with different herbs.

For this recipe you will need:

  • 100 grams of butter, unsalted, room temperature
  • Chili flakes
  • A whole garlic bulb
  • Some olive oil
  • Sea salt
  • Fresh basil

Preheat your oven at 200 degrees Celsius. Take the top off the garlic bulb like it is shown in the photo. Put it on some aluminum foil and put olive oil on top. Close it up like a little parcel and put it in the oven for one hour to roast.

Take it out, please be so careful that oil is boiling hot now. Push out the cloves of garlic into a small bowl and do this to the whole bulb. Put your butter on top, some chili to taste and do the same with the salt. Mix them very well together with a fork. Now make sure to chop your fresh basil very fine, make sure to use a good sharp knife for this. Lastly put in the basil and give it one more stir.

I usually put my butter back into the fridge until I am ready to use it, but you can also freeze it and save It for later.

Home made fries.

As I am sure we all love to snack from time to time. I think every one of us would love to do this the best way possible. I have been raised with home made fries, not so much fries from the chip shop. It would be amazing if you grow your own potatoes, but otherwise make sure to buy them local, biological without pesticides.

Peel your potatoes, if you have them about the size on the photo I would recommend 2 per person. The potato peel can be saved and made into chips, did you know? If you would like a recipe for that, let me know!

Make sure to cut slices of about half a centimeter wide. From that you will proceed to cut each slice into fries, just like the photo shows you. Make sure to give them a good rinse in cold water. They will let go of a lot of starch, this is vital to the crispiness of your fry.

Let them air dry for a moment, make sure they are completely dry before taking the next step!

 

Turn on your deep fryer, put it in 150 degrees Celsius. Pre-bake your fries for 5 minutes, make sure to shake the basket a few times so they will not stick together.

Once all your fries ar3e pre-baked, to them into the refrigerator for at least 3 hours, they need to be cooled off before your finish them off.

 

Once you are ready to fry the potatoes, put your deep fryer to 180 degrees Celsius.

They will need about 4-5 minutes, depending on how thick your sliced them. Make sure to shake your basket a few times will frying.

Once they are golden brown, just add a little salt to taste, best with some home made mayonnaise of ketchup.
