Coffee, warm milk and a cinnamon-vanilla syrup - a softer alternative to the Gingerbread Latte, and an original Christmas Home Café recipe.

coffee with a cinnamon-vanilla syrup, for the Christmas Home Café
A note from Essy: An original recipe for the Christmas Home Café, tested in Esther’s kitchen. The name describes the flavour inspiration - there is no pastry or icing in the drink itself.
Ingredients
- For the cinnamon-vanilla syrup (about 110-130 ml):
- 80 ml water
- 80 g light brown sugar
- 1 cinnamon stick, approximately 6-8 cm
- 1 tsp vanilla extract
- a tiny pinch of fine salt
- For the latte:
- 40 ml espresso, or your usual double shot
- 180 ml milk or lactose-free milk
- 15 ml cinnamon-vanilla syrup, plus up to 5 ml more to taste
- a light dusting of ground cinnamon, optional
Method
- Heat the water, sugar, cinnamon stick and salt in a small saucepan, stirring until dissolved.
- Simmer gently for 2 minutes. Remove from the heat, cover and leave to infuse for 10 minutes.
- Remove the cinnamon stick, stir in the vanilla and measure the finished syrup.
- Mix 15 ml of the espresso and syrup in a mug of at least 300 ml.
- Warm and froth the milk, pour over the coffee and taste before adding extra syrup. Dust lightly with cinnamon if wanted.
